Scotch Scones
4 cups flour
1 cup sugar
2 eggs
1/4 lb. butter
1 cup milk
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
Sift flour, cream of tartar, soda, and salt. Chop in butter (to tiny bits). Add sugar; mix in well beaten eggs and milk. Raisins may be added, if desired.
Drop by spoonfuls onto ungreased cookie sheet. Cook in hot oven (390-400 degrees) for 12 to 15 minutes until golden brown. Serve warm with butter and jam.
Makes between 20 to 24 scones
