Recipe: Cabbage Salad with Chicken and Fresh Mint

Salads - Assorted
Cabbage Salad with Chicken and Fresh Mint
rec.food.cooking/Kim Mai/1995

Cabbage sliced very thin (like cole slaw, I guess)
Boiled, shredded chicken breast
Mint (sprigs from the top and just the leaves from the bottom)
Chives
Red onion, thinly sliced
Green onion, sliced
Cracked black pepper
Parmesan cheese
Crushed red pepper
Roasted peanuts
Italian salad dressing

Combine all of the above in the proportions you prefer. Even if you don't particularly care for cabbage (like me), you'll probably like this. I tend to graze on it a bit after I toss it, before it goes on the table.
