Grilled Sea Bass with Fresh Mint

A couple of years ago, when a friend and I were sharing a weeks' rental in a fairly primitive cottage on Cape Code, a woman in a fish market gave us a suggestion:
grill filets of sea bass with a pat of butter on each, and a good covering of fresh mint leaves.
The idea was, put the filets on the grill, put a pat of butter on each (it melts as the fish heats, keeping the top moist), and layer on the mint leaves (they wilt). We only flipped the fish once, near the end, and thus lost all the mint leaves into the grill (we didn't have one of those nice little cage things...).
But it was still delicious!!
