Minty Grapefruit Sorbet

Makes 3 to 4 cups
1 cup sugar
1 cup water
1 cup fresh mint leaves and stems
2 cups grapefruit juice
3 or 4 drops food coloring
In a medium pan, combine sugar, water and mint. Stir over medium heat until mixture comes to a boil. Simmer over low heat five minutes; set aside. Cover and let stand about ten minutes.
Place a fine strainer over a large bowl. Pour syrup through strainer to remove mint; discard mint. Stir in grapefruit juice and food coloring.
Pour into ice cream canister. Freeze in ice cream maker according to manufacturer's directions.
