Cabbage Soup Special!
Servings: 6

3 tablespoons cooking oil
3 tablespoons flour
2 cups raw beef cubes (bite-size)
2 clove garlic -- minced
2 medium onions -- diced
1/2 cup diced green pepper
1 carrot -- thinly sliced
1 rib celery -- diced
2 cups chopped tomatoes with liquid
8 cups water
2 potatoes -- chopped
1 small head cabbage -- shredded
2 tablespoons beef base
1 teaspoon dill weed
1/4 teaspoon dried basil
Fresh ground pepper and salt
Sour cream
Fresh snipped parsley

In a 4-quart Dutch oven or soup pot, brown beef cubes in hot oil; add onions, peppers, garlic, and celery. Continue stirring until vegetables are limp. Stir in seasonings to taste, beef base, and flour; cook about 1 minute. Stir in water; bring to a boil. Reduce to simmer and cook 30 minutes or meat is almost tender. Add cabbage, carrots, potatoes, and tomatoes. Simmer 25 to 30 minutes or vegetables are tender. Allow soup to stand 15 minutes before serving.

To serve, top each serving with a dollop of sour cream and a sprinkling of parsley.
