Recipe: Sweet and Sour Red Cabbage

Sweet and Sour Red Cabbage

8 slices bacon
4 tablespoons chopped onion
3 tablespoons brown sugar
2 teaspoons cornstarch
1 teaspoon salt
1/3 cup water
1/2 cup cider vinegar
8 cups shredded red cabbage
1 teaspoon caraway seed
1 teaspoon celery seed
1 tart apple -- chopped

In a skillet, fry bacon until crisp. Drain on paper towels. Crumble and set aside. Add onion, brown sugar, cornstarch, salt, water, celery seeds, and vinegar. Cook over low heat, stirring constantly, until mixture is thick and clear. Cool in a large bowl, combine cabbage, apples and caraway seed. Add bacon bits and hot dressing; toss well. Serve warm.
