I can dry pinto beans in a pressure canner. I don't soak them first. I am currently canning dry pinto beans that are 15 years old and they turn out perfectly without soaking them first. Here's what I do: I sort the beans, measure 1 1/4 cups dry pinto beans. Wash very well and place in a quart jar. To the jar I add 1 tsp salt and 1 tsp taco seasoning. I fill the jars with boiling water, put the lids on and pressure cook the bottles for 90 minutes at 15 pounds pressure. They are perfect.
