Recipe: Sloppy Joes (low fat, using ground turkey)

SLOPPY JOES (LOW FAT)

1 (1 1/2 lb.) pkg. The Turkey Store extra lean ground turkey breast
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped celery
1 (16 oz.) can no salt tomato sauce
2 tablespoons white vinegar
2 tablespoons brown sugar
1 teaspoon dry mustard
1/4 teaspoon ground black pepper
6 reduced-calorie hamburger buns

Spray large skillet with no-stick cooking spray. Heat over medium-high heat about 30 seconds. Crumble ground turkey into skillet. Add onion, bell pepper and celery. Cook and stir 3 to 5 minutes or until turkey is lightly browned and vegetables are tender.

Stir in tomato sauce, vinegar, brown sugar, mustard and pepper. Reduce heat to low. Cook 25 to 30 minutes until most of liquid is absorbed, stirring occasionally.

Serve on hamburger buns.

Yield: 6 servings
