Spot on with the tomatillo in the Sauce recipe. Follow the rest and you will end up with a product better than what they are currently selling. Last time I ate there (Dyer, Montana, and George Dieter) was Nov2009 and we followed this "experience" with making this recipe at home and the home version is 100 times better. I even bought the little cardboard boats from a local restaurant supply for added authenticity.
