ISO: Chicos Tacos - Greg

I too grew up in northeast El Paso and absolutely love Chicos Tacos. I found this site and am going to try the recipe out but can you tell me what kind of cheese they put on them? It's wonderful. Also, I love the mexican cookies they sell at Bowie Bakery. I'm looking for a copycat of those pink or brown fluffy cookies they sell in all the mexican bakeries. Your help would be very much appreciated.... Mona
