Recipe(tried): Chicken and Grape Sandwich

This is one of my favourites, based on a Delia Smith recipe. You can either use it in a sandwich or it makes a good salad in its own right.

Chicken and Grape Sandwich
Serves 2

4 slices wholemeal bread
6 oz cooked chicken, chopped
2 spring onions (scallions), finely chopped
1 teaspoon fresh tarragon, chopped
1 tablespoon double (heavy) cream
2 ounces seedless green grapes, halved
3 tablespoons mayonnaise
Salt & pepper to taste
shredded lettuce

The chicken should be flesh only, skinned & bone free. Mix it in a bowl and season with salt & pepper. Add the cream, mayonnaise, tarragon and onion and mix well. Split the grapes and stir in. Put the shredded lettuce on 2 slices of bread and spoon over the chicken mixture. Cover with the remaining bread.

This filling will suit practically any sort of bread. For convenience I usually use cooked chicken breast, although left-over chicken will do nicely. A quick squeeze of lemon juice will also lift the flavour ("kick it up a bit" as Emeril would say)
