Recipe: Chili Con Carne with Beans (serves 100)

CHILI CON CARNE WITH BEANS
Yield: 100 servings
Serving Size: 1/2 cup (4 ounce ladle)

14 lb raw ground beef, 80/20
4 oz dehydrated onions
3 tbsp garlic powder
1 lb green pepper, chopped (optional)
1 tbsp 1 tsp black pepper
1/4 cup 2 tbsp chili powder
2 tbsp paprika
2 tbsp onion powder
1/4 cup ground cumin
1 (#10) can canned tomatoes, with liquid, chopped
1 gallon plus 2 cups water
1/2 (#10) can tomato paste
1 (#10) can canned pinto or kidney beans, drained
TO SERVE:
3 lb cheddar cheese, shredded (optional)

Brown ground beef. Drain.

Add onions, garlic powder, green pepper (optional), black pepper, and seasonings. Cook for 5 minutes.

Stir in tomatoes, water, and tomato paste; mix well. Bring to a boil. Reduce heat. Cover. Simmer slowly, stirring occasionally until thickened, about 40 minutes.

Stir in beans. Cover and simmer about 10 minutes or until hot.

TO SERVE:
Pour into serving pans. Portion with 4 oz ladle (1/2 cup). Garnish with cheese (optional).

Notes: 1/2 cup (4 oz ladle) provides 2 oz of meat/meat alternate and 3/8 cup of vegetable
