Recipe: Turkey Barbecue Sandwiches (serves 100)

Makes 100
Serving Size: 1 sandwich
1/3 cup plus 2 tsp canola oil
1 1/2 quarts onion, fresh, finely chopped
7 lb tomato sauce, canned
2 cup brown sugar, packed
1 cup cider vinegar
1/3 cup plus 2 tsp Worcestershire sauce
2 tbsp hot pepper sauce
2 tbsp cayenne pepper
1/3 cup plus 2 tsp dry mustard
1 tbsp plus 1 tsp black pepper
1 tbsp plus 1 tsp salt
9 1/2 lb cooked turkey, dark and white meat, cut into strips
TO SERVE:
100 buns hamburger buns, split
Saute onions in oil until soft and translucent.
Over medium heat, stir in tomato sauce, sugar, vinegar, Worcestershire sauce, hot pepper sauces, herbs and spices. Bring to a boil, immediately reducing heat; simmer for 20 to 30 minutes.
Add cooked turkey strips, mix and cook for an additional 30 minutes or until flavors are combined. Stir occasionally.
TO SERVE:
Portion 1/2 cup (level no. 8 scoop) turkey mixture over bottom half of each bun. Top with other half of bun; serve immediately.
