Recipe(tried): Chimmichurry sauce

Here's a great recipe for chimmichurry

1/2 c. olive oil
1/4 c. red wine vinegar
1 large onion chopped
2 cloves garlic crushed
1 small bunch parsley finely chopped
1 small bunch cilantro finely chopped
1 t. crumbled dried oregano
1/4 t. cayenne pepper
a-a/2 t. salt
1 t. coarsely ground black pepper

Whisk together oil and vinegar, add other ingredients, lets stand a few hours.

Our favorite use is on grilled chicken. S&P chicken pieces, brush with sauce, and set on grill. Use sauce to baste as necessary. Reserve some sauce to add when serving--with wedges of lemon and lime.

I sometimes thin the sauce out with additional oil and vinegar. A makes the sauce in a blender.
