Recipe: Chinese Lobster Sauce

CHINESE LOBSTER SAUCE

2 teaspoons salted black beans
1 clover garlic, minced
2 green onions
1 large egg
1 tablespoon water
2 tablespoons peanut oil
1/2 pound ground pork
1/2 cup chicken broth
1/2 tablespoon thin soy sauce
1 teaspoon sugar
cornstarch paste

Soak the salted black beans in water for ten minutes, then rinse and drain.

Mash the beans with the garlic.

Cut the green onions into 1/2-inch sections and mix with the beans.

Beat the egg with the water in a small bowl.

Heat a wok and add the bean mixture to the hot (but not smoking) wok. Stir briskly until the aroma of the beans and garlic is strong (don't overcook.)

Add the ground pork, in very small amounts, stirring steadily, until the mixture comes to a boil.

Thicken the mixture with cornstarch paste to create a light, cream-like sauce (but NOT too thick.)

Slowly stir in the beaten egg mixture and cook briefly.
