Recipe: Chocolate Pudding Mix

Hi there!

Here is a great recipe for chocolate pudding mix. I keep this mix in a large jar and make as many servings of pudding as I need at one time as the recipe can easily be halved. This is also a good thing to take camping as you only have to add water and it is really quick to make.

Chocolate Pudding Mix
- Makes about 6 cups mix

1 1/2 cups sugar
2 1/2 cups skim milk powder
1 cup cornstarch
3/4 cup cocoa
1 tsp. salt

- Mix all ingredients together thoroughly.
- Label and store in airtight container at room temperature.


Chocolate Pudding
- Makes 4 servings

1 1/4 cups pudding mix
2 1/2 cups warm water
1/2 tsp. vanilla

- Combine pudding mix and water in heavy saucepan.

- Heat, while stirring, until mixture comes to a full boil. Cook for 2 minutes, stirring constantly; add vanilla.

- Pour into serving dishes. Chill.
