Recipe(tried): Christmas Breakfast at the Ashers - Ham Rollups (make ahead)

CHRISTMAS BREAKFAST AT THE ASHERS
HAM ROLLUPS


1/2 stick (1/2 cup) margarine
1/2 small onion, chopped
1 dozen eggs (when doubling add one dozen plus three eggs)
2 cups shredded cheddar cheese
2 cups shredded sharp or longhorn cheesee
3 pkg (1 lb each) ham slices
TO SERVE:
1 jar Cheese Whiz

In a large skillet, melt butter and saute onion.

Beat eggs and add to butter and onions. Cook until scrambled. Set aside to cool. Add shredded cheeses while still slightly warm.

To assemble, use two slices of ham per rollup, overlap long edges together. Add egg and cheese mixture to slices and rollup. Place rolls in a large oblong casserole that has been greased or sprayed with cooking spray. Once all rollups are in dish cover with foil and place in refrigerator overnight.

Bake at 350 for 1 hour with foil on.

Serve warm drizzled with Cheese Whiz.
