Recipe(tried): Cinco de Mayo burritos
Misc.These are EASY & fun and would go great with Joan's rice:
Equal parts salsa (hot or mild, depending upon your tastebuds!),
grated cheese, canned refried beans (try the black bean variety)
About 2 Tb. sour cream per burrito
About 1 Tb. chopped cilantro per burrito
Lots of large flour tortillas, warmed
Mix together the salsa, cheese and refried beans in a microwavable
dish. Cook on high 2-3 min. or until the cheese has melted. Stir
everything 'til smooth.
For every tortilla, spread 1/4 - 1/2 C. of the bean mixture (depen-
ding on the size of the tortillas). Spread on the sour cream and
sprinkle on the cilantro. Roll up and serve.
NOTE: You can find fat-free refried beans & sour cream. You can
even use fat-free cheese, tho I haven't. To "reconstitute" fat-
free cheese, let it soak in warm vegetable broth for about 15
min., then drain and use.
