Coconut Kisses (Besitos de Coco)
A Taste of Puerto Rico/Yvonne Ortiz 1997

2 cups grated fresh coconut (the meat of 1 medium-size coconut)
1 cup water
1 1/2 cups dark brown sugar

Combine the coconut and water in a saucepan with a heavy bottom. Bring to a boil. Add the brown sugar. Reduce the heat to low and cook for 30 minutes, stirring occasionally, or until the mixture becomes thick and sticky. Drop the mixture by tablespoons onto a greased cookie sheet. Let the coconut kisses cool completely.
