Here are a few cold fruit soups given to me by a chef on a cruise ship. There are no measurements, I just add what feels like the correct amounts. Use a blender or food processor to make the soups.
Peach Soup
Blend canned (drained) peaches, some peach jam, coffee cream, vanilla ice cream and sour cream into a smooth consistency. Add fine diced canned peaches for a garnish.Cream of Strawberry Soup
1-2 packages frozen strawberries, thawed (use the liquid)
strawberry ice cream
sour cream or yogurt
coffee cream or milk
Mix all ingredients together until creamy and fomay. Garnish with fresh strawberries.Chilled Cream of Blueberry Soup
Blend frozen blueberries, vanilla ice cream, coffee cream, blueberry jam and a little sour cream into a smooth consistency, add whole, defrosted blueberries for garnish.Chilled Cream of Mango Soup
Blend canned mangos, a little orange jam, coffee cream, sour cream and vanilla ice cream into a smooth consistency. Garnish with fresh. diced mango (if available).Chilled Cream of Pineapple Soup
Blend pineapple sherbet, coffee cream a little sour cream and some pineapple juice into a smooth consistency. Add fine diced pineapple for garnish.Cream of Banana Soup
Blend bananas with vanilla ice cream (if available, use banana ice cream) coffee cream and sour cream. Blend into a smooth consistency.Cream of Kiwi Soup
Blend peeled kiwi's, vanilla ice cream, coffee cream, sour cream and a little honey into a smooth consistency. Add fine diced kiwi's for garnish.Chilled Cream Papaya Soup
Blend fresh, very ripe papayas, orange jam (just a little) lime juice, coffee cream and vanilla ice cream into a smooth consistency. Add fine diced papaya for garnish.
As you can see, most of the recipes for the chilled soups are very basic-just play around with the measurements. Enjoy. Jan
