This is really good on a hot day, but you have to keep it in the fridge until its time to eat.

2 packages lime Jell-O
1 cup grated carrots
1 cup grated cucumber
2 cups cherry tomatoes
1 cup alfalfa sprouts

Make the Jell-O the way the package directions say. Cut the cherry tomatoes in half. Add all the veggies to the Jell-O, stir and pour into a flat pan. Put in the fridge for at least 2 hrs, until the Jell-O is all set. Cut into squares and serve on a lettuce leaf. Put some sour cream, or cottage cheese, on top if you want.

For something a little bit different, you can put the sour cream or the cottage cheese into the Jell-O along with the veggies and jell the whole thing together. Maybe still put a dollop of sour cream or cottage cheese on top when its served.
