CONNIE STEVENS' FRIDGE CLEANER FAJITAS
"Connie and her husband Chris like to cook this when the fridge is getting full. You can use just about anything - when they cooked it on the weekend diner, they added corn to the beans. It added color and a little sweetness."
1 lb. or more boneless chicken breasts, cut into strips
1 green bell pepper, cut into strips
1 red or yellow bell pepper, cut into strips
1 large onion, coarsely chopped
Ground black pepper (to taste)
Crushed red pepper flakes (to taste)
1 (16 oz.) can black beans
1 pkg. soft flour tortilla wrappers
Jalapeno peppers, as much as you can stand
Diced tomato
Fat-free cheddar cheese
Fat-free sour cream
In a large skillet, brown chicken with a dash of olive oil.
Add peppers and onion and saute on a medium heat. Season with black pepper and crushed pepper.
Heat beans. Heat tortilla wrappers.
Fold chicken and vegetables into wrappers. Top with jalapeno, tomato, fat-free cheese and sour cream.
VARIATIONS:
Other great fillings include cilantro, shrimp, pork, corn, red cabbage, mushrooms, salsa, lettuce, avocado or whatever you need to get rid of!
