This is sort of a really fast soup or stew that my family really liked. Wanted a hearty homemade soup on winter days but was a working mom with not a lot of time. All ingredients are canned or frozen and I think the corned beef gives it a really good flavor.
I just mix it all in a 10 inch pot and let it simmer until the potatoes are done but tastes better the longer it simmers. You can leave it on the stove simmering and let everyone eat whenever they want to. The corn beef should be dispersed through out the stew not in chunks, it sort of does that by itself if you break it up into chunks when you put it in the pan.
1 can corned beef
1 12 oz can diced tomatoes
1 12 oz can tomato sauce
1 or 2 cups mixed vegetables
3 or 4 diced potatoes
Place in corned beef in pot and crumple it up some. Add other ingredients and enough water to cover. Simmer at least until potatoes are done.
Sometimes I use 2 cans of diced tomatoes or add some frozen diced onions etc.. You can add more water when it cooks down or not depending on whether you want a thick stew or like it soupy. We liked it with crackers and peanut butter sandwiches.
