Recipe: Cranberry Muffins

Cranberry Muffins

Makes 12

3 1/4 cups unbleached flour
3/4 cup whole wheat flour
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups sugar
2 oz. butter
3 eggs
1 1/2 cups orange juice
1 tablespoon grated orange rind
2 1/2 cups coarsely chopped cranberries
1 cup chopped walnuts

Butter 12-cup muffin tin or line cups with muffin papers. Preheat oven to 350 degrees. Combine flours, baking powder, baking soda, and salt. Cream together sugar with butter, then beat in eggs. Add orange juice and orange rind to eggs. Toss chopped cranberries and walnuts into flour mix, distributing them well throughout. Add egg & orange juice mixture to flour mixture and mix until just combined. Fill muffin cups two-thirds and bake about 35 to 40 minutes until done.
