Recipe: Cranberry Salsa with Brie

CRANBERRY SALSA WITH BRIE (Appetizer)

1 1/2 cup whole fresh cranberries (I used frozen - they worked fine)
1 Tablespoon grated fresh ginger
1 diced jalapeno pepper (I used more)
cilantro, to taste (didn't have any, so I omitted this)
1/4 cup olive oil
2 tbs. sugar
salt and pepper
sliced scallions

Puree cranberries and all ingredients in food processor. Add salt and pepper to taste. Serve!

Serving suggestion:
Serve with salmon, corn chips or brie.
