CREAM CHEESE PECAN PIE
9" unbaked pie crust
8 oz. cream cheese, softened
1 egg, beaten
1/2 cup sugar
1 tsp. salt
1 tsp. vanilla extract
1 1/4 cups coarsely chopped pecans
3 eggs, beaten
1 cup light corn syrup
1/4 cup sugar
1 tsp.vanilla extract
Beat together the cream cheese, egg, sugar, salt, and vanilla extract until well blended. Spread into the pie crust.
Sprinkle the pecans over cheese layer.
Beat together until smooth the eggs, syrup, sugar, and vanilla extract. Pour over pecan layer. Place on lower rack in oven and bake at 375 degrees for 40-45 minutes until center is firm.
Cool and serve with Cool Whip.
