Recipe: Creamy Italian Dressing (using sour cream, blender or food processor)

3 tablespoons finely grated Parmesan cheese
1 garlic clove, minced or pressed
1 teaspoon minced fresh oregano
2 scallions, thinly sliced
1 1/2 tablespoons white-wine vinegar
1/4 cup sour cream
1/4 cup mayonnaise
1/2 cup extra-virgin olive oil
2 tablespoons minced fresh basil
Salt and pepper
In a blender or food processor, process the Parmesan, garlic, oregano, scallions, and vinegar to a smooth puree, stopping to scrape down sides as necessary. Add the sour cream and mayonnaise and pulse to combine.
With the motor running, very slowly add the oil and process until dressing is thick and emulsified, stopping to scrape down blender or processor once if necessary.
Add the basil and pulse to combine. Scrape the dressing into a small bowl, stir to mix, and set aside for about an hour to blend flavors.
Before serving, season with 1/2 teaspoon of salt and pepper to taste, and stir to mix.
Makes about 1 cup
