Recipe: Date-Nut Waffles

Breakfast and Brunch
DATE-NUT WAFFLES

2 cups flour
1 cup dates, finely cut
1/2 cup walnuts, finely chopped
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon nutmeg
1/2 teaspoon baking soda
1/4 teaspoon salt
3 eggs, separated
1 3/4 cups buttermilk
1/2 cup butter, melted

Combine first 8 ingredients (flour through salt).

Beat egg yolks with buttermilk and butter. Add liquid at once to dry ingredients. Beat until smooth.

Beat egg whites until stiff; fold into batter.

Bake on hot waffle iron.

Makes 8 to 10 (4 inch) waffles
