Misc.SUN VALLEY POTATO FRIES
2 large baking potatoes
1/4 cup light mayonnaise
Preheat oven to 400, cut potatoes into 1/4" sticks.Spoon mayonnaise into large ziplock. Add potatoes; shake to coat well. Arrange in single layer in jelly roll pan so potatoes do not touch on another. If desired, srinkle with salt to taste. Bake 20 minutes or until golden brown and crisp, turning once with spatula. Calories=73, fat=3g,cholesterol=3mg,sodium=3mg.
CREOLE STUFFED PEPPERS
6 large green bell peppers
boiling water
1/2 cup chopped onion
1 Tbsp.margarine
2 cups chopped fresh tomatoes
2 cups fresh okra slices
2 cups fresh corn, cut off the cob, about 4 ears
1/8 tsp. black pepper
Preheat oven to 350. Cut off tops of peppers, remove seeds and membranes. Add peppers to boiling water in large saucepan; cover and boil 5 mins., drain and cool. In large saucepan over med. heat, cook and stir onion in margarine,add tomatoes, corn, okra and black pepper. Cook until mixture is thoroughly heated and slightly thickened. Fill peppers with corn mixture, place in greased (Pam) shallow baking dish. Bake 30 mins. or until peppers are tender.
Calories= 119, fat= 3g,cholesterol=0, sodium= 39 mg.
Have you tried any of the Mrs. Dash herb blends?, they have no salt and very little sodium.
