It's been a long time, but I think this is correct. Note that this is the recipe for making huge amounts of chicken using restaurant supplies.
Batter was made by mixing 7(?) lbs of salt, 2 lbs of butter milk (dry) and 1 lbs of sweet milk (dry) with 5 gallons of water.
Chicken was prepared by covering with flour, dropping in batter (above) and then back in flour, then frying in oil at 350 until the pieces floated. I liked to double batter the chicken.
