Recipe: Down South Shortcakes with Cream Cheese Topping (Pillsbury refrigerated biscuits
Desserts - FruitDOWN SOUTH SHORTCAKES
1 can Pillsbury Refrigerated Biscuits
1 tablespoon butter or margarine, softened
5 teaspoons sugar, divided use
FOR SERVING:
1 quart fresh or frozen berries, sweetened
Whipped cream or Cream Cheese Topping (recipe follows)
Place 5 Biscuits on ungreased baking sheet; brush centers with melted or soft butter.
Sprinkle with half of sugar. Place remaining biscuits on top; flatten to 3-inch rounds. Brush tops with butter and sprinkle with remaining sugar.
Bake at 425 degrees F for 12 to 15 minutes. Split shortcakes; fill and top with berries.
Serve warm with Cream Cheese Topping or whipped cream.
CREAM CHEESE TOPPING
1 (3 ounce) package cream cheese, softened
1 tablespoon plus 1/2 cup heavy (whipping) cream, divided use
1/4 teaspoon ground nutmeg (optional)
Add 1/2 cup whipping cream
1/3 cup confectioners' sugar
Mix together cream cheese, 1 tablespoon of the heavy cream and, if desired, nutmeg. Add the remaining 1/2 cup heavy cream; beat until thick. Blend in confectioners' sugar.
Makes 5
