POTATO STUFFED FRANKS
Potato Buds mashed potatoes (enough for 4 servings)
2 tbsp. finely chopped onion
2 tbsp. snipped fresh parsley
1 tsp. prepared mustard
1 (16 oz) pkg. frankfurters (about 10)
1/2 cup shredded cheddar cheese
Prepare mashed potatoes in a 2 quart saucepan as directed on package for 4 servings. Stir in onions, parsley, and mustard.
Split frankfurters lengthwise, not cutting completely through. Spread frankfurters open; place cut side up on rack in broiler pan. Spread with potato mixture; sprinkle with cheese.
Set oven control to broil.
Broil frankfurters with tops about 5-inches from heat until cheese is brown, 5-8 minutes.
Makes 4-5 servings
