Easy "Risotto" with Ham and Corn

2 tablespoons olive oil
1 medium onion -- chopped
2 cloves garlic -- chopped
2 cups arborio rice
1/2 cup dry white wine
3 cans (14-1/2 oz. each) chicken broth
1/2 teaspoon salt
1/8 to 1/4 tsp cayenne
1 (16oz) bag frozen corn -- thawed
1 ham steak (about 1 lb) -- cut in 1/2" cubes
1/4 pound Fontina cheese -- shredded
2 tablespoons chopped fresh parsley
Heat oil in an 8-qt. pot. Add onion and garlic; cook, stirring occasionally, over med. heat for 5-7 min. or until the onion is softened. Stir in rice; cook 2 min. Add wine; cook 1 min. Add broth. Bring to a boil. Cover; reduce heat to low; cook 20 min. Stir in salt cayenne, corn, ham and cheese. Cook over low heat, stirring occasionally, for 2 min. Garnish with parsley and serve.
Ham and Cheese Ziti

Serving Size : 6
2 1/2 cups uncooked ziti pasta -- ( 9oz )
1/4 cup margarine or butter
1 clove garlic -- finely chopped
1/4 cup flour
1/2 teaspoon salt
2 cups milk
1/2 teaspoon Dijon mustard
2 cups shredded Colby cheese -- ( 8oz )
4 ounces sliced cooked deli ham -- cut in thin strips
1/3 cup grated Parmesan cheese
1. Heat oven to 350 degrees. Cook and drain pasta as directed on pkg.
2. While pasta is cooking, melt margarine in 3-qt. saucepan over low heat. Cook garlic in margarine 30 seconds, stirring frequently. Stir in flour and salt. Cook over med. heat, stirring constantly, until mixture is smooth and bubbly. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 min. Stir in mustard and Colby. Cook, stirring occasionally, until cheese is melted. Stir pasta and ham into cheese sauce.
3. Pour into ungreased 2-qt. casserole. Sprinkle with Pamesan. Bake, uncovered, 20-25 min. or until bubbly.
