For example, El Chico's Cascabel Rib-Eye is a new spin on an old classic. The same chile cascabel marinade (a mixture of pineapple and orange juices with cascabel peppers and other spices) is used for both the tacos al pastor and the rib-eye steak. "Tacos al pastor have been around forever," says Lozano. "Using the same marinade with a choice aged steak and calling it the Cascabel Rib-Eye made the dish seem more exotic and upscale."
