Rolled / cut-out cookies variation
Hello! I'm not sure if AJ will see your request. In the meantime, the same sugar cookie recipe but with variations that I posted includes a variation for Filled Sugar Cookies (see recipe) that are rolled out. To make them 1/4 cup flour is added to the amount of flour in the dough. The filled cookies are baked at 325 degrees F instead of 350 degrees F used for the other variations (but that may be because of the filling).
My 1984 Fannie Farmer Baking Book has a similar recipe for sugar cookies. The instructions for using the dough to make rolled/cut-out cookies doesn't include adding extra flour to the dough but the dough is chilled before rolling:
"Put the dough in a bowl. Cover and refrigerate for about 2 hours, until cold and firm. (If dough becomes rock hard, let it stand at room temperature for about 30 minutes to soften.)
Roll out the dough to about 1/2-inch thick. Cut into shapes. Bake for 5 to 8 minutes (this recipe is for baking at 375 degrees F so they will probably take longer if baked at 350 degrees F as called for in the 1979 recipe), until barely browned at the edges and golden brown on the bottom."
