Fat Free Banana Muffins

Makes 12 nice size muffins
I have made these muffins every weekend since I got the recipe because they are so very good, and they stay for a while (I keep them in a ziploc bag). Before you look at the ingredients and say "oh no, another applesauce recipe", please do try them they are not dry and tasteless.
1 cup brown sugar (may be reduced to 2/3 cup)
1 container egg beaters (equals to 2 eggs)
1/2 cup unsweetened applesauce
2 1/3 cups flour
2 tsp. baking powder
1 tsp. salt
2-3 medium mashed bananas
cinnamon, nutmeg...as you like
Preheat oven to 350F. Spray a 12-cup muffin pan or a loaf pan with cooking spray (Pam).
Mix brown sugar, egg beaters, and applesauce. Stir in the flour, baking powder, salt and spices, then the bananas. Place batter in prepared pan.
Bake at 350 until muffins are light brown and pull away from the sides of the tin (about 20 minutes) - longer if baking in a loaf pan (start checking after 30 minutes).
