University of Georgias So Easy to Preserve
(good basic book that is USDA tested)
The Joy Of Cooking All About Canning and Preserving (has more unique recipes for foods like jams, jellies and pickles)
Some books are not USDA tested and contain recipes and methods that would be considered unsafe, so I stick to these listed above. I know them to be very valuable.
