Time of year for fiddlehead ferns - picked up a pound yesterday at the store, they're only around a few days so had to have some. They need about 4 separate rinsings, then steam them for quite awhile in a little butter, salt and pepper. I always use a little balsamic on them for plating and shaved parmesan on top.
Does anyone else know about these? I think they may just be New England thing found along stream beds in the woods, early spring.
