GARLIC SAUTEED SPINACH
1 tsp. light olive oil
2 cloves garlic, minced
8 cups fresh spinach (about 1 lb.)
Freshly ground black pepper to taste
Heat oil in a skillet over medium heat. Add garlic; saute for 1 minute.
Add spinach; cover and steam for 3 to 4 minutes or until spinach begins to wilt. Remove from heat. Season with black pepper.
Serves 4
