Hi Kevin - I had the same problem with choc. chip cookies. I was using all butter and the cookies were always flat, but now I use mostly butter, substituting 3 or 4 tablespoons of the butter with shortening. This has solved the problem for me, and doesn't affect the taste. Hope this helps!
