APPLE AND PEACH CRUMBLE
FOR THE FRUIT:
1/2 cup white granulated sugar
1 1/2 tablespoons cornstarch
1 1/2 lbs granny smith apples, peeled and cut into 1/2-inch slices
1 (1 lb) pkg frozen peach slices
1 teaspoon fresh lemon juice
1 teaspoon grated lemon peel
1/2 teaspoon almond extract
FOR THE CRUMBLE:
1/2 cup all purpose flour
1/2 cup brown sugar, packed
1/3 cup old fashioned or quick oats, uncooked
1/2 teaspoon cinnamon (or more, to taste)
1/4 cup unsalted margarine
1/3 cup slivered almonds (optional)
Preheat oven to 400 degrees F. Coat a baking pan with vegetable cooking spray (use a pan you can take to the table).
Mix the white sugar and the cornstarch in a bowl. Add the sliced apples, peaches, lemon juice, lemon peel and almond extract. Toss to combine. Transfer the mixture to the baking pan. Place the baking pan on a baking sheet to avoid spillovers.
Bake for one hour.
WHILE BAKING, PREPARE THE TOPPING:
Mix flour, brown sugar, oats and cinnamon in a medium bowl. Add margarine and rub it into the mixture until it resembles coarse meal. Mix in the almonds, if using, and set the mixture aside.
After the fruit bakes for 1 hour, sprinkle the topping over the fruit and continue to bake for 10 more minutes.
Serve warm. It's also good cold or at room temperature.
