FREEZING SLICED AVOCADOS
Use only fully ripe, but firm, avocados. Peel, slice/cut into chunks. Put them in a bowl with fresh lemon juice, toss them gently. Using a slotted spoon, scoop them into a sealable freezer bag, in one layer. Get as much air out as possiblebefore sealing.
When thawing, lay out the amount to be thawed in on layer on 3-4 paper towels. This will absorb excess liquid.
Mine always turn out just as pretty and green as the day I floze them, and not too soggy to use either as they are in a salad, or mashed for Guacamole dip.
Contrary to what I've heard about freezing avocados, I have had good luck with freezing them in chunks or slices.
