Recipe: Freezing tomatoes
Misc. recently on a program on the Food Channel they froze tomatoes whole (as is, just picked from the garden). They just dropped them in Ziplock bags and put them in the freezer. They said that, due to the high water content in tomatoes, that when you remove them from the bag that the skins just slip off easily and you can cook with them easily. I have not tried this but, since I am not a canner, I was fascinated by this easy method. Has anyone ever tried this and do you think that it is a safe method?
