Hi Roblee!Here is the recipe from "The Back Of The Box Gourmet Cookbook."Which uses Ocean Spray Cranberries in this mixture.This is very easy if using a food processor.Hope you enjoy & Happy Holidays!
FRESH CRANBERRY ORANGE RELISH
Makes about 2 1/2 cups
1 medium orange
1 pkg.(12 oz.) Ocean Spray fresh or frozen cranberries
3/4 to 1 cup sugar
Slice unpeeled orange into eighths; remove seeds.
Place half the cranberries and half the orange in food processor container. Process till mixture is evenly chopped. Transfer to a bowl. Repeat with remaining cranberries and orange slices.
Stir in sugar to desired sweetness. Store in refrigerator or freezer.
Serve with turkey, duck, or chicken, use the relish to fill pastries and cookies when you bake, or use to top your favorite cheesecake.
Note:
May also be prepared in a food grinder. (I have visions of my sweet grandmother grinding this in one of those heavy metal(?) grinders which was attached to the table by screwing it on the side of the table or counter! We children would help her when her arm got tired from grinding all those cranberries (we had a huge family!) I still have one of those old grinders & its taken a beating & still works as well as the day that she bought it! LOL.
