This is what we are having for dinner tomorrow; it's only worth making when the ingredients are at their peak, and fresh! Otherwise, wait until next year...
FRESH PASTA SAUCE WITH TOMATO, BASIL AND BRIE
4 ripe large tomatoes, cut into 1/2 inch cubes
1 lb Brie, rind removed
1 cup cleaned fresh basil leaves, cut into strips
3 garlic cloves
1 cup extra virgin olive oil
salt and pepper to taste
Combine tomatoes, Brie, basil, garlic, olive oil, and 1/2 tsp salt and the pepper in a large serving bowl.
Prepare at least 2 hours before serving and set aside, covered, at room temperature.
At dinner time, cook pasta of your choice (we are having penne), drain, and immediately toss with the tomato sauce.
Serve at once, passing the peppermill and grated Parmesan cheese, if you like.
