Recipe(tried): Fresh Tomato, Basil and Ham Quiche

Hello, last night for dinner we had this quiche and it turned out really well. I had to cook it for about 20 minutes longer than called for and I will post that cooking time instead of the original.

I have been trying to make some freeze ahead meals for after my baby finally joins our family and have succeeded in making two. With only two more weeks to go it looks like a trip to Costco is in my near future to stock up because cooking and a new born dont mix too well!

Fresh Tomato, Basil and Ham Quiche

pastry for 1 single crust 9 in. pie

Cooking Spray
1 t. olive oil
1 c. onion, sliced
2 cloves garlic, minced
1 medium zucchini or yellow squash, thinly sliced
3/4 c shredded mozzarella
1/2 cup chopped ham (I used a few slices of deli ham)
1 c. sliced tomatoes
1/4 c. shredded fresh basil
1 c. evaporated skimmed milk
1 1/2 t. cornstarch
2 eggs
1 egg white
1/4 t. freshly ground pepper

Spray 9 in. pie plate with cooking spray and place crust in plate tucking into corners and fluting edges, set aside.
Coat skillet with cooking spray and add oil and place over medium heat until hot. Saute onion and garlic until lightly browned about 10 minutes. Season with a little S&P. Spread onion mixture over bottom of prepared crust then layer squash and sprinkle with cheese and ham. Arrange tomato slices over cheese and top with basil. Combine milk and remaining 4 ingredients in blender, process until smooth, pour over tomatoes and bake at 350 degrees for an hour and 10 minutes. Let stand 10 minutes before serving.

I served this with fruit salad w/ yogurt dressing. YummY!
