Recipe(tried): Friday Night Dinner in Fla. - Plum Good Chicken, Cabbage Casserole, Latin Style Green Beans, and Lemon Pound Cake

Tonite we are having Plum Good Chicken, Cabbage Casserole, Latin Style Green Beans, and Lemon Pound Cake.

Plum Good Chicken

3 lbs. chicken pieces (I use breasts)
1/2 cup soy sauce
1/2 cup plum jam
1/4 cup honey
1/4 cup Orange juice
1 clove garlic, minced
paprika

Arrange chicken, meaty side down, in a shallow 9x13 inch, foiled-lined baking pan. In a small bowl, combine soy sauce, jam, honey, orange juice and garlic. Brush chicken generously with some of the mixture, then pour remianing sauce over chicken. Cover and bake 350 for 25 mts. Then uncover and turn chicken over. Continue to cook uncovered for 30 mts longer, basting occasionally. After 30 mts., sprinkle with paprika and cook an additional 15 mts. Serves 4-6

Cabbage Casserole

1/2 head large green cabbage, finely shredded
2 cups slightly crushed cornflakes, divided
1/2cup Hellman's mayo
1/4 cup melted margerine
1 10 and 3/4 oz. can cream of celery soup
1 cup milk
1 cup grated sharp Cheddar cheese

Soak shredded cabbage in icy water for 30 mts. then drain. In a large bowl, mix cornflakes with margerine. Prepare a 9x13 inch baking dish by spraying it with Pam or any other cooking oil-spray. Spread of cornflake mixture on bottom of pan, then cover with drained cabbage. In a medium saucepan combine mayo, soup and milk, heat to just below boiling. Pour this hot mixture over the cabbage then top with the grated cheese and remaining cornflake mixture.. Bake uncovered 350 for 30-40 mts.

Latin Style Green Beans

1 med. onion, chopped
1 tsp. olive oil
1 14-1/2 oz. can mexican style stewed tomatoes
1 28 oz. can cut green beans, drained
1/4 tsp. salt
1/4 tsp. garlic salt
seasoned croutons

In a skillet, saute the onion in the olive oil. Add the tomatoes, and mash to break into smaller pieces. Add the drained green beans, sprinkle with the two salts. Stir then simmer for 15 mts. Add the seasoned croutons just as the dish is being served to keep them crunchy. Serves 4

Lemon Pound Cake Dusted with Confectioner's Sugar

3 cups sugar
2 sticks (1 cup) butter, softened
6 eggs
1 tsp. vanilla extract
1 tsp. lemon extract
1 tsp. lemon peel
3 cups flour
1 (8 oz.) container sour cream
1/4 tsp. baking soda
Confectioner's sugar (for dusting)

Preheat oven to 350 degrees F. Grease and flour a Bundt or tube pan.

Cream the sugar and butter together. Add eggs, one at a time, blending well after each addition. Add the extracts and the lemon peel, and mix well. Set aside.

In a large mixing bowl, mix the baking soda and sour cream together. Add flour alternately with the sour cream mixture, beginning and ending with flour. Pour batter into prepared pan.

Bake at 350 degrees F for 1 hour and 15 minutes. Let cool in pan for 15 minutes then invert on rack and let cool completely before dusting with confectioner's sugar.
