Fried Apples
6 red delicious or Rome apples
1/4 c water
1/3 c butter
1/3 c light brown sugar
2 T. lemon juice
Peel, core and slice apples into thick slices. Place in skillet with water and butter. Cook over moderate heat, stirring to prevent sticking, until barely tender. Sprinkle with brown sugar and lemon juice. Toss, cover and let stand ten minutes before serving. Fried apples are served with fried ham slices or homemade sausage for breakfast.

"You won't believe it's almost fat-free" salad dressing
10 cloves garlic, skins left on
2 tsp. Dijon mustard (I use Trader Joe's brand)
2 Tbsp. honey
2 Tbsp. seasoned rice vinegar
1 12-ounce carton of soft silken tofu
1/4 tsp. salt
coarse ground pepper, to taste
Put garlic cloves in saucepan and cover with water by a couple of inches. Bring
to boil. Turn to low, cover and cook for about 20 minutes, till soft. Drain
and allow to cool. Squeeze garlic out of their skins into a blender or food
processor. Add remaining ingredients and blend or process till smooth. Taste
and correct seasonings, if necessary.

Ranch Dressing Mix Plus

Recipe By : Quick Cooking
1 cup dried parsley flakes
1/2 cup finely crushed saltines(about 15 crackers)
1/2 cup dried minced onion
1/2 cup garlic salt
1/2 cup onion salt
1/4 cup garlic powder
1/4 cup onion powder
2 tablespoons dill weed
Additional ingredients
2 cups mayonnaise
2 cups buttermilk
For Thousand Island Dressing
1/4 cup chili sauce
2 tablespoons sweet pickle relish
For Cucumber Dressing
1 medium cucumber, peeled, seeded -- pureed
1 teaspoon celery seed
In a large mixing bowl, combine first 8 ingredients; mix well. Store in airtight container in a cool dry place. YIELD: 3 cups mix (enough to make 24 batches of ranch salad dressing)
For Ranch Salad Dressing: In a bowl, whisk together 2 tablespoons of mix with mayonnaise and buttermilk. Refrigerate until serving. Yield 4 cups.
For Thousand Island Dressing: Add chili sauce and pickle relish to 1 cup prepared ranch dressing.
For Cucumber Dressing: Add cucumber and celery seed to 1 cup of prepared ranch salad dressing.

Lemon Chicken
1 frying chicken, cut up
2 lemons, juice only, save peel
2 T. vegetable oil
I tsp. paprika
1/2 tsp. salt
1/2 tsp. thyme
1/4 C. flour
1 tsp. Paprika
1 tsp. grated lemon peel
Oil for frying
Rinse chicken in Salt water; dry thoroughly. In a large bowl mix lemon juice, oil, 1 teaspoon paprika, salt, and thyme; roll chicken pieces in marinade until well coated. Cover bowl; let chicken marinate 6 to 8 hours or overnight, turning pieces occasionally. Preheat oven to 350 degrees. Mix flour, 1 teaspoon paprika, and lemon peel in a bag; add chicken and shake well. Chicken will be lightly coated. Heat small amount of oil in a skillet; add chicken and brown it over medium high heat. Place pieces on an oiled baking pan and bake uncovered about 30 minutes. Serves 4. Can be Bar-B-Qued on grill. Set rack 5 to 6 inches from coals or bricks, keep grill at low heat. After marinating place on grill and baste with marinade, add more grated lemon peel for additional flavor.

Custard powder is basically just corn starch, sugar, and flavoring, and is used to make what is called custard in Australia and other countries but what would be called pudding in the US.
Corn starch, sugar, with some vanilla, would probably substitute. Many US cookbooks have recipes for corn starch-based pudding.

1/4 Tablespoon Oregano
1/4 Tablespoon Tarragon
1/2 Tablespoon Garlic Powder
1/4 Tablespoon Lemon Pepper
In a medium bowl, combine all the ingredients. Store in an airtight container.
Ranch Dressing: 1/2 cup mayonnaise, 1/2 cup buttermilk, 1 tbsp. mix, In a large bowl, whisk together all the ingredients. Refrigerate for one hour before serving.
Ranch Dip: 2 tbsp. mix, 1 cup mayonnaise, 1 cup sour cream or yogurt. Combine ingredients. Refrigerate for 2 hours before serving with ray vegetables, or as a topping for baked potatoes or steamed vegetables.
Note: Low-fat mayonnaise and low-fat yogurt for sour cream can be used.
Hidden Valley Ranch Dressing Mix
15 Square saltines (2")
2 Cups Dry minced parsley flakes
1/2 Cup Dry minced onions
2 Tablespoons Dry dill weed
1/4 Cup Onion salt
1/4 Cup Garlic salt
1/4 Cup Onion powder
1/4 Cup Garlic powder
SALAD DRESSING
1 Tablespoon Mix
1 Cup Mayo
1 Cup Buttermilk -- No Substitutes
Put crackers through blender on high speed until powdered. Add parsley, minced onions and dill weed. Blend again until powdered. Dump into bowl. Stir in onion salt, garlic salt, onion powder and garlic powder. Put into container with tight-fitting lid. Store at room temp for 1 year. Makes 42 (1 tbsp) servings. TO USE MIX-Combine mix, mayonnaise and buttermilk. Yield 1 pint.
