Recipe: Garden Tomato and Green Bean Salad (using sour cream basil, and Dijon mustard)

GARDEN TOMATO AND GREEN BEAN SALAD

1 pound fresh green beans, trimmed
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon dried basil leaves
1/2 teaspoon ground black pepper
1/4 teaspoon salt
2 tablespoons chopped fresh parsley
2 tablespoons milk
1 tablespoon country-style Dijon mustard
2 medium ripe tomatoes, sliced 1/4-inch
1/2 cup sliced 1/8-inch red onion, separated into rings

Place beans in 3-quart saucepan; add enough water to cover. Bring to a full boil. Cook over medium heat until beans are crisply tender (12 to 15 minutes).

Meanwhile, in small bowl stir together all remaining ingredients except tomatoes and onion; set aside.

Rinse cooked green beans with cold water.

TO SERVE:
On platter or individual salad plates arrange green beans, tomatoes and onion rings. Pour dressing over salad.

Makes 6 servings
