Makes about 18 Muffins

2 cups unsifted flour
3/4 tsp. salt
3/4 tsp. baking soda
1/4 tsp. baking powder
2 eggs
3/4 cup brown sugar
3/4 cup corn oil
3/4 tsp. vanilla
1 1/3 cups prepared fruit or vegetables (see below)
1 1/2 tsp. cinnamon
1 1/2 tsp. ground ginger
1/3 cup poppy seeds
3/4 cup coarsely chopped toasted walnuts

Oven - 400 degrees.

Sift together flour, salt, baking soda, and baking powder. In separate bowl, whip eggs with sugar and oil. Stir in vanilla, whatever fruit or vegetables you are using, spices and poppy seeds. Then add flour mixture and nuts. Do not overmix.

Spoon batter into greased or papered muffin cups, filling each about three-quarters full. Bake 25 to 30 minutes til golden brown.

VARIATIONS:
APPLE or PEAR - core and shred them
ZUCCHINI - shred them unpeeled
ORANGES - wash well, chop up (skin, pulp, and juice) and process in food processor using steel blade. Add 1/3 EXTRA cup poppy seeds, 1 EXTRA tsp. ginger and 1/2 EXTRA tsp. cinnamon)
PUMPKIN - steam fresh pumpkin and cut into small bits
TOMATO - cut them into small bits
